For the Chicken:
- 1.5 lb chicken breasts
- 1 red bell pepper, diced
- 1/2 large yellow onion, diced
- 2 garlic cloves, chopped
For the Sauce:
- 1/2 cup peanut butter (natural, creamy or crunchy)
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tsp chili garlic paste
- 1 tbsp lime juice
- 2 tbsp fresh cilantro, chopped
Instructions
- Add diced bell pepper, onion, and garlic to the bottom of the slow cooker.
- Place chicken breasts on top of the vegetables.
- In a bowl, whisk together peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth.
- Pour the sauce evenly over the chicken.
- Cover and cook on HIGH for 2–3 hours or LOW for 4–5 hours.
- Remove the lid, stir in lime juice and chopped cilantro.
- Serve warm over rice, noodles, or in lettuce wraps.
Notes
Natural peanut butter gives the best flavor and prevents an overly sweet taste.
For juicier results, cook on LOW or use chicken thighs instead of breasts.
Sauce too thick? Add a splash of broth. Too thin? Let it cook uncovered slightly longer.
Customize heat by adding more chili garlic paste or fresh jalapeños.
