For the Chicken

  • 1 lb boneless chicken breasts or thighs
  • 2 cups corn (fresh, frozen, or canned)

For the Sauce

  • 4 oz cream cheese
  • 1/3 cup cotija cheese, crumbled
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder

For Garnish

  • Fresh cilantro, chopped (optional)

Instructions

  1. Place the chicken breasts or thighs in the bottom of the slow cooker.
  2. Add the corn over the chicken.
  3. Top with cream cheese, cotija cheese, lime juice, garlic, chili powder, smoked paprika, and onion powder.
  4. Do not stir.
  5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  6. Once the chicken is fully cooked and tender, shred it directly in the slow cooker using two forks.
  7. Stir everything together until creamy and well combined.
  8. If desired, add a splash of milk or chicken broth to adjust the consistency.
  9. Garnish with fresh cilantro and serve immediately.

Notes

Avoid stirring before cooking to allow the cream cheese to melt properly.

Chicken thighs provide richer flavor, while chicken breasts offer a leaner option.

Frozen chicken can be used; add approximately 1 hour of cooking time.

Feta cheese may be substituted for cotija cheese.

For extra heat, add chipotle powder, cayenne pepper, or diced jalapeños.
