- 2 cups corn (fresh, frozen, or canned, drained)
- 1 cup mayonnaise
- ½ cup sour cream
- 1 cup crumbled cotija cheese (or feta as substitute)
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lime
- ¼ cup chopped fresh cilantro
Instructions
- Place the chicken in the bottom of your slow cooker.
- In a bowl, mix mayonnaise, sour cream, chili powder, paprika, garlic powder, salt, pepper, and lime juice until smooth.
- Stir in the corn and half of the cheese.
- Pour the mixture evenly over the chicken.
- Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken is tender and fully cooked.
- Optional: For a golden finish, quickly broil or sear the chicken after cooking.
- Sprinkle remaining cheese and fresh cilantro on top before serving.
Notes
Swap cotija with feta if needed—it still gives that salty, creamy bite.
Want extra heat? Add a pinch of cayenne or diced jalapeños.
If the sauce thickens too much, stir in a splash of milk or broth before serving.
