  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 cups corn (fresh, frozen, or canned, drained)
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 cup crumbled cotija cheese (or feta as substitute)
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lime
  • ¼ cup chopped fresh cilantro

Instructions

  1. Place the chicken in the bottom of your slow cooker.
  2. In a bowl, mix mayonnaise, sour cream, chili powder, paprika, garlic powder, salt, pepper, and lime juice until smooth.
  3. Stir in the corn and half of the cheese.
  4. Pour the mixture evenly over the chicken.
  5. Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken is tender and fully cooked.
  6. Optional: For a golden finish, quickly broil or sear the chicken after cooking.
  7. Sprinkle remaining cheese and fresh cilantro on top before serving.

Notes

Swap cotija with feta if needed—it still gives that salty, creamy bite.

Want extra heat? Add a pinch of cayenne or diced jalapeños.

If the sauce thickens too much, stir in a splash of milk or broth before serving.

Great served over rice, in tacos, or with warm tortillas.
