Marinade & Glaze

  • 3 tablespoons soy sauce (low sodium preferred)
  • 6 tablespoons honey (or maple syrup)
  • 1 teaspoon lime zest
  • 3 tablespoons fresh lime juice
  • 4 garlic cloves, minced
  • 1 ½ tablespoons fresh ginger, grated
  • 1 tablespoon vegetable oil
  • 1 ½ tablespoons Sriracha (adjust to taste)
  • 1 ¼ teaspoon kosher salt
  • ½ teaspoon cornstarch (optional, for thickening)

Instructions

  1. Make the Marinade
    In a bowl, whisk together soy sauce, honey, lime zest, lime juice, garlic, ginger, oil, Sriracha, and salt.
  2. Marinate the Chicken
    Pour half the marinade over the chicken in a sealed bag or container. Marinate for 30 minutes at room temperature or 6–12 hours in the refrigerator.
  3. Prepare the Glaze
    Mix cornstarch into the reserved marinade and microwave for about 1 minute until slightly thickened. Set aside.
  4. Preheat Grill
    Heat grill to medium-high and lightly oil the grates. Soak wooden skewers if using.
  5. Grill the Chicken
    Thread chicken onto skewers and pat dry. Grill for 9–12 minutes, turning occasionally, until cooked through (internal temp 160°F). Baste with glaze while grilling.
  6. Rest and Serve
