- 6 tablespoons honey (or maple syrup)
- 1 teaspoon lime zest
- 3 tablespoons fresh lime juice
- 4 garlic cloves, minced
- 1 ½ tablespoons fresh ginger, grated
- 1 tablespoon vegetable oil
- 1 ½ tablespoons Sriracha (adjust to taste)
- 1 ¼ teaspoon kosher salt
- ½ teaspoon cornstarch (optional, for thickening)
Instructions
- Make the Marinade
In a bowl, whisk together soy sauce, honey, lime zest, lime juice, garlic, ginger, oil, Sriracha, and salt. - Marinate the Chicken
Pour half the marinade over the chicken in a sealed bag or container. Marinate for 30 minutes at room temperature or 6–12 hours in the refrigerator. - Prepare the Glaze
Mix cornstarch into the reserved marinade and microwave for about 1 minute until slightly thickened. Set aside. - Preheat Grill
Heat grill to medium-high and lightly oil the grates. Soak wooden skewers if using. - Grill the Chicken
Thread chicken onto skewers and pat dry. Grill for 9–12 minutes, turning occasionally, until cooked through (internal temp 160°F). Baste with glaze while grilling. - Rest and Serve
