  • 1 cup red lentils, uncooked (dry)
  • 3 cups water
  • 1 tablespoon olive oil
  • 1 cup onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne powder
  • 2 cloves garlic, crushed

Optional Garnishes:

  • Sour cream
  • Fresh cilantro
  • Lime wedges

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened and lightly browned, about 4–5 minutes.
  2. While the onion cooks, rinse the red lentils thoroughly and drain.
  3. Add the lentils, water, diced tomatoes, crushed garlic, cumin, chili powder, garlic powder, onion powder, paprika, salt, and cayenne powder to the pot.
  4. Stir well and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 10–15 minutes, stirring occasionally, until the lentils are tender and most of the liquid has been absorbed.
  6. Remove from heat and serve warm.
  7. Garnish with sour cream, cilantro, and lime wedges if desired.

Notes

For a smoky flavor, substitute chipotle chili powder for regular chili powder.

Vegetable broth can be used instead of water for extra depth of flavor.

Add diced bell peppers, black beans, or corn for additional texture and nutrition.

Adjust the cayenne to make the dish milder or spicier.

Leftovers store well in the refrigerator for up to 4 days.
