  • 2 pounds boneless skinless chicken breasts (about 3 to 4 breasts)
  • 1 red bell pepper, finely chopped
  • ½ medium yellow onion, finely chopped
  • 2 (13.5-ounce) cans quartered artichoke hearts, drained and squeezed
  • 2 cups baby spinach, roughly chopped
  • ½ cup freshly grated parmesan (optional)
  • ½ cup mayonnaise
  • 4 garlic cloves, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Cut chicken into 1-inch pieces and place in a large bowl.
  2. Add chopped bell pepper, onion, artichokes, spinach, and parmesan (if using).
  3. In a separate bowl, mix mayonnaise, garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper.
  4. Pour the dressing over the chicken mixture and stir until evenly coated.
  5. Transfer to a 9×13-inch baking dish and spread evenly.
  6. Bake uncovered for 25–30 minutes, until chicken is cooked through and bubbly.
