- 4 boneless, skinless chicken breasts
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper until smooth.
- Place chicken in a dish or zip-top bag and pour marinade over it. Coat well and let marinate for at least 15 minutes.
- Lightly grease a baking dish and place the marinated chicken inside. Reserve the marinade.
- Bake chicken for 20 minutes.
- Remove from oven, add sliced strawberries on top, and drizzle with reserved marinade.
- Return to oven and bake for another 10–15 minutes, until chicken reaches 165°F (75°C).
- Remove from oven, sprinkle fresh basil over the top, and let rest for 5 minutes before serving.

- For deeper flavor, marinate the chicken up to 2 hours.
