Description

Strawberry Basil Chicken is a fresh, sweet-savory dish featuring juicy baked chicken topped with strawberries, basil, and a rich balsamic glaze—perfect for an easy gourmet dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper until smooth.
  3. Place chicken in a dish or zip-top bag and pour marinade over it. Coat well and let marinate for at least 15 minutes.
  4. Lightly grease a baking dish and place the marinated chicken inside. Reserve the marinade.
  5. Bake chicken for 20 minutes.
  6. Remove from oven, add sliced strawberries on top, and drizzle with reserved marinade.
  7. Return to oven and bake for another 10–15 minutes, until chicken reaches 165°F (75°C).
  8. Remove from oven, sprinkle fresh basil over the top, and let rest for 5 minutes before serving.

  • For deeper flavor, marinate the chicken up to 2 hours.
