  • ½ teaspoon black pepper

Street Corn

  • 2 cups corn (off the cob)
  • 1 tablespoon butter
  • ⅓ cup green onion
  • 23 tablespoons mayonnaise
  • 23 tablespoons Greek yogurt
  • ¼ cup chopped cilantro
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lime juice
  • ⅓ cup cotija cheese

For Serving

  • 2 cups cilantro lime rice (or white rice)
  • 1 avocado, sliced
  • ½ cup sliced red onion
  • ½ cup fresh cilantro
  • Chipotle aioli (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, mix olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Rub over chicken thighs.
  3. Place chicken on a lined baking sheet and bake for 25–30 minutes, until internal temperature reaches 165°F.
  4. Let chicken rest for 5 minutes, then slice into strips.
  5. Meanwhile, melt butter in a skillet over medium heat. Add corn and sauté for about 5 minutes until lightly charred.
  6. Transfer corn to a bowl and mix in green onion, mayo, Greek yogurt, cilantro, chili powder, paprika, salt, pepper, lime juice, and cotija cheese.
  7. Assemble bowls with rice as the base, then top with chicken, street corn, avocado, red onion, and cilantro.
  8. Drizzle with chipotle aioli and serve immediately.
