Description

This Sweet Pepper Pasta Salad combines tender pasta, crisp mini peppers, crunchy cucumbers, creamy feta, ginger dressing, and everything bagel seasoning. It’s colorful, refreshing, quick to prepare, and perfect for summer lunches, potlucks, cookouts, or easy meal prep.


Ingredients

  • 8 oz (225g) pasta
  • 4 sweet mini peppers, thinly sliced
  • 3 mini cucumbers, diced
  • 1/2 cup crumbled feta cheese
  • 1 cup ginger dressing
  • 2 tablespoons everything but the bagel seasoning
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta according to package directions until al dente.
  2. Drain and rinse the pasta under cold water to stop the cooking process. Drain well and transfer to a large mixing bowl.
  3. Add the sliced sweet mini peppers, diced cucumbers, crumbled feta, and everything bagel seasoning.
  4. Pour the ginger dressing over the pasta and vegetables.
  5. Toss gently until everything is evenly coated with the dressing.
  6. Taste and season with salt and black pepper as needed.
  7. Serve immediately or chill before serving for an even more refreshing pasta salad.

Notes

  • Rinse and drain the pasta thoroughly before assembling the salad so excess water doesn’t dilute the dressing.
  • Taste before adding salt because feta, ginger dressing, and everything bagel seasoning may already contain plenty of sodium.
  • Short pasta shapes such as rotini, wheels, bow ties, or small shells work especially well.
  • For the best texture, refrigerate leftovers in an airtight container and enjoy within 3–4 days.
  • Toss before serving leftovers and add a small splash of ginger dressing if the pasta has absorbed too much dressing.
