Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 avocado, sliced (optional)
  • 2 tablespoons pumpkin seeds (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 20–25 minutes until tender and slightly caramelized, stirring halfway through. Let cool.
  4. In a small bowl, whisk together olive oil, lime juice, cumin, smoked paprika, garlic powder, salt, and pepper.
  5. In a large bowl, combine roasted sweet potatoes, black beans, chickpeas, bell pepper, and red onion.
  6. Pour dressing over the salad and toss gently to coat evenly.
  7. Fold in chopped cilantro and adjust seasoning if needed.
  8. Refrigerate for at least 30 minutes to enhance flavor.
  9. Before serving, top with avocado slices and pumpkin seeds if desired.
