Description

These Sweet Potato Rounds with Brie, Cranberry, and Pecans are the perfect festive appetizer—simple to make, beautifully colorful, and bursting with creamy, sweet, tart, and crunchy flavors. Ideal for holiday gatherings, family dinners, or anytime you want an elegant bite without the fuss.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and sliced into ¼-inch rounds

  • 23 tablespoons olive oil

  • Salt and black pepper, to taste

  • 68 ounces brie cheese, sliced

  • ½ cup dried cranberries

  • ½ cup toasted pecans

  • Fresh rosemary for garnish (optional)

Instructions

  1. Prep the Sweet Potatoes:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Peel and slice the sweet potatoes into ¼-inch thick rounds.

  2. Season and Roast:
Arrange the rounds in a single layer on the baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss lightly. Roast for 20–25 minutes, flipping halfway, until tender and lightly browned on the edges.

  3. Add the Brie:
Remove from the oven and top each round with a small slice of brie. Return to the oven for 5 minutes or until the cheese is soft and melty.

  4. Finish with Cranberries & Pecans:
Sprinkle dried cranberries and toasted pecans over each round. Garnish with rosemary if desired. Serve warm and enjoy!

Notes

Toast your pecans for 3–4 minutes in a dry pan to deepen the flavor.

Goat cheese works great if you prefer a tangier flavor.

You can roast the sweet potato rounds ahead of time and reheat before adding the brie.

For extra color, drizzle a touch of honey or balsamic glaze on top.
