Description

Sweet & Savory Asian Mango Glazed Chicken is a quick and flavorful dish featuring juicy chicken coated in a sticky, tropical mango glaze with hints of garlic, ginger, and soy. Perfect for busy weeknights, this vibrant recipe delivers bold takeout-style flavor in under 30 minutes.

Ingredients

Scale

For the Chicken:

  • pounds boneless, skinless chicken thighs or breasts, cut into bite-size pieces
  • 1 tablespoon olive oil or sesame oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder

For the Mango Glaze:

  • 1 ripe mango, peeled and chopped (or ¾ cup mango purée)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • ½ teaspoon fresh grated ginger
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

For Serving (optional):

  • Steamed jasmine rice or rice noodles
  • Sliced green onions
  • Toasted sesame seeds
  • Fresh cilantro or Thai basil
  • Lime wedges

Instructions

  1. Prepare the Mango Glaze:
Blend the mango until smooth. In a saucepan, combine mango purée, soy sauce, honey, vinegar, garlic, ginger, and chili flakes. Simmer for 5–6 minutes. Stir in cornstarch slurry and cook until thickened. Set aside.
  2. Cook the Chicken:
Season chicken with salt, pepper, and garlic powder. Heat oil in a skillet over medium-high heat. Cook chicken for 6–8 minutes until golden and fully cooked.
  3. Glaze the Chicken:
Reduce heat to low. Pour the mango glaze over the chicken and toss to coat. Simmer for 2–3 minutes until glossy and caramelized.
  4. Serve:
Serve over rice or noodles. Garnish with green onions, sesame seeds, herbs, and a squeeze of lime.

Notes

  • Use ripe mango for the best natural sweetness and flavor
  • Adjust chili flakes to control spice level
  • Chicken thighs stay juicier, but breasts work well for a leaner option
  • Add a splash of water if the glaze thickens too much
