  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar or lime juice
  • 2 garlic cloves, minced
  • ½ teaspoon fresh grated ginger
  • ½ teaspoon chili flakes (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Prepare the glaze:
    Blend mango until smooth. Pour into a saucepan and add soy sauce, honey, rice vinegar, garlic, ginger, and chili flakes. Simmer for 5–6 minutes. Stir in cornstarch slurry and cook until thickened.
  2. Cook the chicken:
    Season chicken with salt, pepper, and garlic powder. Heat oil in a skillet over medium-high heat. Cook for 6–8 minutes until golden and fully cooked.
  3. Combine and glaze:
    Reduce heat to low. Pour mango glaze over chicken and toss to coat. Simmer for 2–3 minutes until sauce thickens and becomes glossy.
  4. Serve:
    Serve over rice or noodles. Garnish with green onions, sesame seeds, herbs, and a squeeze of lime.
