  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 teaspoon kosher salt, plus more to taste
  • 2 tablespoons (90g) Thai yellow curry paste
  • ⅓ cup (42g) powdered peanut butter
  • 2 (14-ounce) cans reduced-fat coconut milk
  • 4 cups chicken bone broth
  • 2 packages rice ramen, or noodles of choice
  • 1 pound rotisserie chicken or cooked chicken, chopped
  • 23 handfuls fresh cilantro, chopped
  • 12 teaspoons fish sauce
  • Juice of 1 lime

For Serving

  • Minced shallots or red onion
  • Lime wedges
  • Chili crisp
  • Wonton strips or fried noodles
  • Fresh cilantro

Instructions

  1. Soften the onion: Heat olive oil in a large pot over medium heat. Add onion and kosher salt. Cook for 4–5 minutes, stirring occasionally, until softened.
  2. Cook the curry paste: Add the yellow curry paste and stir for about 30 seconds, until fragrant.
  3. Make the broth: Stir in powdered peanut butter, coconut milk, and chicken bone broth. Add a handful of chopped cilantro if desired. Stir well and bring to a gentle simmer.
  4. Add chicken and noodles: Add the rice ramen and chopped rotisserie chicken. Simmer for 4–5 minutes, or until the noodles are tender and the chicken is heated through.
  5. Season the soup: Stir in 1 teaspoon fish sauce and the lime juice. Taste and add additional fish sauce, lime juice, or salt as needed.
  6. Serve: Ladle into bowls and garnish with cilantro, minced shallots or red onion, lime wedges, chili crisp, and wonton strips as desired.

Notes

  • Full-fat coconut milk can replace reduced-fat coconut milk for a richer, creamier broth.
  • Curry pastes vary in heat and saltiness, so adjust the amount to taste.
  • For meal prep, store the noodles separately so they don’t absorb too much broth.
  • Leftovers can be refrigerated in an airtight container for 3–4 days, depending on the freshness of the cooked chicken.
