Description

Thai Peach Chicken is a quick and flavorful dinner featuring tender chicken, juicy peaches, and a sweet-savory Thai-inspired sauce with a hint of spice.


Ingredients

  • 1 tablespoon peanut or coconut oil
  • 1 ½ lb chicken breast, boneless and skinless, cut into quarters
  • 1 teaspoon salt
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 1 (398 ml) can peach slices (reserve juice)
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon Thai chili sauce
  • Juice of one lime
  • 1 teaspoon dried lemongrass
  • 1 tablespoon cornstarch
  • 1 red bell pepper, thinly sliced
  • ¼ cup chopped peanuts
  • 2 tablespoons fresh cilantro (or parsley/basil)

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Season chicken with salt and cook for about 3 minutes per side until browned. Remove and set aside.
  3. Reduce heat to medium-low. Add onion, garlic, and ginger; cook for 3 minutes until softened.
  4. Drain peaches, reserving about ¾ cup of juice.
  5. In a bowl, whisk together peach juice, honey, soy sauce, fish sauce, vinegar, chili sauce, lime juice, and lemongrass.
  6. Add cornstarch and whisk until smooth.
  7. Return chicken to skillet. Add sauce, bell pepper, and peach slices.
  8. Stir and cook until sauce thickens.
  9. Cover and simmer for 5 minutes until chicken is fully cooked.
  10. Garnish with peanuts and cilantro. Serve hot.

Notes

  • Adjust spice level by adding more or less chili sauce.
  • Fresh peaches can be used; add extra liquid if needed.
  • Serve with rice or noodles to soak up the sauce.
