Description

These Thai Peanut Chicken Wraps are a quick and flavorful meal packed with tender chicken, crunchy veggies, and a creamy peanut sauce. Perfect for busy weeknights, meal prep, or a fresh and satisfying lunch.

Ingredients

Scale

For the Peanut Dressing:

  • ½ cup natural creamy peanut butter
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons rice wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 12 teaspoons sriracha sauce (to taste)
  • Water, as needed to thin

For the Wraps:

  • 3 cups cooked chicken breast, chopped
  • 3 cups coleslaw mix
  • 1 cup grated carrots
  • ½ cup fresh cilantro, chopped
  • ½ cup roasted peanuts, roughly chopped
  • 6 large flour tortillas

Instructions

  1. Make the Peanut Dressing:
In a medium bowl, whisk together peanut butter, soy sauce, brown sugar (or honey), rice vinegar, garlic, ginger, and sriracha until smooth. Add water gradually until the sauce is creamy and pourable.
  2. Prepare the Filling:
In a large bowl, combine chopped chicken, coleslaw mix, carrots, cilantro, and peanuts. Toss gently.
  3. Mix Everything Together:
Pour the peanut dressing over the mixture and toss until evenly coated. Let sit for 3–5 minutes.
  4. Warm the Tortillas:
Wrap tortillas in a damp paper towel and microwave for 30 seconds until soft.
  5. Assemble the Wraps:
Place filling in the center of each tortilla, fold in the sides, and roll tightly. Slice and serve immediately.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Adjust sriracha for more or less heat.
  • Add lime juice for extra brightness.
  • For a low-carb option, use lettuce wraps instead of tortillas.
  • Best enjoyed fresh, but filling can be stored for up to 3 days
