For the Aromatics
- 2 teaspoons oil, divided
- 1 cup chopped red onion
- 1 hot green chili, such as Serrano, Indian chili, Thai chili, or jalapeño, finely chopped
- 1/2 to 1 cup chopped bell pepper, red, green, or a combination
For the Spices
- 1 to 2 teaspoons garam masala
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 3 teaspoons Kashmiri chili powder, or paprika for a milder option
- 1/4 to 1/2 teaspoon cayenne pepper
- 2 teaspoons dried fenugreek leaves (kasuri methi)
For the Tofu
- 7 ounces firm or extra-firm tofu, pressed for at least 10 minutes and torn into bite-sized pieces
For the Rice Bake
- 8 ounces tomato puree, passata, or unseasoned tomato sauce (not tomato paste)
- 1 tablespoon ginger-garlic paste, or 1/2-inch fresh ginger and 4 garlic cloves, minced
- 1/4 cup plain non-dairy yogurt
- 1/4 to 1/2 teaspoon salt
- 1 cup Indian long-grain white basmati rice, rinsed well
- 1 1/2 cups water or vegetable stock, or a mixture of coconut milk and stock
- 1 cup frozen vegetables or chopped vegetables of choice
For Garnish
- Fresh cilantro, chopped
- Fresh lime juice
- Red pepper flakes, optional
- Non-dairy yogurt, optional
Instructions
- Preheat the oven: Preheat oven to 400°F (205°C). Grease a 9×11-inch or similar-size baking dish with 1/2 teaspoon oil.
- Prepare the vegetables and tofu: Add the onion, green chili, and bell pepper to one side of the baking dish. Place the torn tofu on the other side. Drizzle with the remaining oil.
- Season: Combine the garam masala, garlic powder, onion powder, salt, Kashmiri chili powder, cayenne, and dried fenugreek in a small bowl. Sprinkle half over the vegetables and half over the tofu. Toss each side separately to coat.
- Roast: Bake for 14 to 18 minutes, until the tofu begins to crisp and the onions start turning golden. Stir each side separately if needed for even browning.
- Make the sauce: Remove the dish from the oven and transfer the tofu to a bowl. Add the tomato puree, ginger-garlic paste, non-dairy yogurt, and 1/4 to 1/2 teaspoon salt to the roasted vegetables. Mix well.
- Add the rice: Stir in the water or stock, followed by the rinsed basmati rice and frozen vegetables. Spread everything into an even layer.
- Choose your tofu texture: For softer, saucier tofu, place it back over the rice before baking. For crispier tofu, keep it separate until the rice has finished cooking.
- Bake: Lightly cover the baking dish with parchment paper and bake for about 25 minutes, or until the rice is tender and the liquid has been absorbed. Depending on your oven and baking dish, the rice may need up to 5 additional minutes.
- Finish and serve: Rest for 1 to 2 minutes, then fluff the rice gently with a large fork. Top with the crispy tofu, fresh cilantro, lime juice, and red pepper flakes. Drizzle with non-dairy yogurt if desired.
Notes
- For crispier tofu: Keep the roasted tofu out of the rice while it bakes and add it just before serving.
- Adjust the spice: Reduce or omit the cayenne and replace Kashmiri chili powder with paprika for a milder version.
- Rice matters: Use white basmati rice for the stated cooking time and liquid ratio. Other varieties may require different amounts of liquid and longer cooking.
- Rinse the rice: Wash the basmati thoroughly before adding it to the baking dish.
- Make it creamier: Replace part of the water or stock with coconut milk.
- Serving ideas: Serve with plant-based raita, pickled onions, mango chutney, or warm naan.
- Storage: Refrigerate cooled leftovers in an airtight container. For the best texture, store the crispy tofu separately from the rice.
