Honey Lime Dressing
- Juice of 1½ limes
- 1 tablespoon extra virgin olive oil

- Pinch of salt
Instructions
- In a mason jar, combine the lime juice, olive oil, honey, and salt. Seal and shake well until fully combined. Adjust sweetness or acidity to taste.

- Pour the honey lime dressing over the salad and gently toss until evenly coated.
- Sprinkle the remaining feta over the top.
- Garnish with additional fresh mint and basil if desired.
- Serve immediately and enjoy.
Notes
For an oil-free dressing, replace the olive oil with an extra tablespoon of fresh lime juice.
Cube the watermelon and crumble the feta up to 2 days in advance.
Prepare the dressing up to 3 days ahead and refrigerate until ready to use.
Slice the fresh herbs just before serving for the best flavor.
Delicious add-ins include cucumber, strawberries, blackberries, arugula, pistachios, or thinly sliced red onions.
This salad is best served immediately after tossing with the dressing.
