Description

This Watermelon Feta Salad is a fresh and colorful summer side dish made with juicy watermelon, sweet blueberries, creamy feta, fresh mint and basil, all tossed in a bright honey lime dressing. Ready in just 15 minutes, it’s perfect for BBQs, picnics, potlucks, and warm-weather dinners.

  • 78 cups seedless watermelon, cut into ¾-inch cubes
  • 1½ cups fresh blueberries
  • 1 cup crumbled feta cheese, divided
  • Fresh mint leaves, thinly sliced
  • Fresh basil leaves, thinly sliced

Honey Lime Dressing

  • Juice of limes
  • 1 tablespoon extra virgin olive oil
  • 12 tablespoons honey, to taste
  • Pinch of salt

Instructions

  1. In a mason jar, combine the lime juice, olive oil, honey, and salt. Seal and shake well until fully combined. Adjust sweetness or acidity to taste.
  2. In a large serving bowl, combine the cubed watermelon, blueberries, mint, basil, and ¾ cup of the crumbled feta.
  3. Pour the honey lime dressing over the salad and gently toss until evenly coated.
  4. Sprinkle the remaining feta over the top.
  5. Garnish with additional fresh mint and basil if desired.
  6. Serve immediately and enjoy.

Notes

For an oil-free dressing, replace the olive oil with an extra tablespoon of fresh lime juice.

Cube the watermelon and crumble the feta up to 2 days in advance.

Prepare the dressing up to 3 days ahead and refrigerate until ready to use.

Slice the fresh herbs just before serving for the best flavor.

Delicious add-ins include cucumber, strawberries, blackberries, arugula, pistachios, or thinly sliced red onions.

This salad is best served immediately after tossing with the dressing.
