Creamy Zucchini Chicken Alfredo Roll Ups are filled with tender shredded chicken and Alfredo sauce, then topped with mozzarella and Parmesan and baked until bubbly and golden. - 1 large, thick zucchini
- 2 cups shredded cooked chicken (rotisserie chicken works great)
- 2 cups Alfredo sauce, homemade or store-bought
- 1 1/4 cups shredded mozzarella cheese
- 1/4 cup shaved Parmesan cheese
- 1 teaspoon dried parsley or chopped fresh parsley
- Cooking spray, for greasing the baking dish
Instructions
- Preheat the oven to 375°F. Lightly spray a 9×5-inch or 8×8-inch baking dish with cooking spray.
- Using a mandoline or sharp chef’s knife, slice the zucchini lengthwise into approximately 1/8-inch-thick slices. You should have about 12 usable slices.
- Lay one zucchini slice flat. Add a small amount of shredded chicken and top with approximately 1 tablespoon Alfredo sauce.
- Carefully roll the zucchini around the filling and place it seam-side down in the prepared baking dish. Repeat with the remaining zucchini, chicken, and filling.
- Pour the remaining Alfredo sauce evenly over the zucchini roll ups.
- Sprinkle the shredded mozzarella and shaved Parmesan evenly over the top.
- Bake for approximately 25 minutes, or until the sauce is bubbling, the cheese is melted and lightly golden, and the zucchini is tender.
- Remove from the oven and garnish with parsley. Let the roll ups rest for 10 minutes before serving.
Notes
- Choose a large, firm zucchini that is relatively straight so you can cut wide, even slices.
- Keep zucchini slices around 1/8 inch thick. Slices that are too thick can be difficult to roll.
- A mandoline makes even slices easier, but always use the safety guard.
- Avoid overfilling the zucchini or the chicken may fall out as you roll it.
- Rotisserie chicken makes this recipe especially quick and convenient.
- If your zucchini contains a lot of moisture, lightly salt the slices, let them sit briefly, and pat them dry before assembling.
- Let the finished dish rest for 10 minutes before serving so the sauce can settle.
- Store leftovers promptly in an airtight container in the refrigerator for up to 3–4 days.
