Description

Baked Yogurt is a creamy, custard-like breakfast made with Greek yogurt, eggs, and fresh berries. This easy 6-ingredient recipe is naturally gluten-free, packed with protein, and perfect for meal prep, breakfast, brunch, or a healthy snack.


Ingredients

  • 2 cups Greek yogurt
  • 4 large eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 3 tablespoons cornstarch
  • 1 1/2 cups berries, divided

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.
  3. Add the cornstarch and whisk until fully incorporated.
  4. Fold in 1 cup of the berries.
  5. Pour the mixture into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup berries evenly over the top.
  7. Bake for 45 minutes, or until the center is set and no longer jiggly.
  8. Remove from the oven and let cool for about 45 minutes.
  9. Slice into 9 squares and serve as is or with an extra drizzle of maple syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days.

Freeze for up to 3 months.

Use fresh or frozen berries.

Greek yogurt is recommended for the best texture.

Allow the baked yogurt to cool before slicing for clean squares.
