- 2 cups Greek yogurt
- 4 large eggs
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 3 tablespoons cornstarch
- 1 1/2 cups berries, divided
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, whisk together the Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.
- Add the cornstarch and whisk until fully incorporated.
- Fold in 1 cup of the berries.
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1/2 cup berries evenly over the top.
- Bake for 45 minutes, or until the center is set and no longer jiggly.
- Remove from the oven and let cool for about 45 minutes.
- Slice into 9 squares and serve as is or with an extra drizzle of maple syrup.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days.
