Description

This Easy Taco Soup is a hearty, flavor-packed dinner made with ground beef, beans, corn, tomatoes, and warm spices. Ready in just 30 minutes on the stovetop or easily prepared in the slow cooker, it’s the perfect comfort food for busy weeknights.


Ingredients

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 45 cloves garlic, minced
  • 4 cups beef or chicken broth
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can chili beans in chili sauce
  • 1 (28 oz) can crushed tomatoes
  • 1 (4 oz) can chopped green chiles
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Cayenne pepper, to taste

Optional Toppings

  • Sour cream
  • Shredded cheddar cheese
  • Chopped cilantro
  • Diced onions
  • Avocado
  • Crushed tortilla chips

Instructions

Stovetop Method

  1. In a large Dutch oven or soup pot, cook the ground beef and onion over medium-high heat until the beef is browned and the onion is softened.
  2. Add the garlic and cook for 1–2 minutes until fragrant.
  3. Stir in the broth, corn, black beans, chili beans, crushed tomatoes, green chiles, and seasonings.
  4. Bring to a gentle simmer.
  5. Cover and simmer for 15 minutes, stirring occasionally.
  6. Taste and adjust seasonings as needed.
  7. Serve hot with desired toppings.

Slow Cooker Method

  1. Add the ground beef to the slow cooker and break it into small pieces.
  2. Add all remaining ingredients and stir well.
  3. Cover and cook on High for 4–6 hours or Low for 8–10 hours.
  4. Stir before serving and add favorite toppings.

Notes

For a thicker soup, simmer uncovered for an additional 10–15 minutes.

A few tablespoons of cream cheese can create a creamier texture.

Rotel tomatoes can be substituted for extra flavor and heat.

Freeze cooled leftovers in airtight containers for up to 3 months.

This soup often tastes even better the next day.

Serve with cornbread, tortilla chips, or a fresh salad.
