- 1 small onion, chopped
- 4–5 cloves garlic, minced
- 4 cups beef or chicken broth
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can chili beans in chili sauce
- 1 (28 oz) can crushed tomatoes
- 1 (4 oz) can chopped green chiles
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- Cayenne pepper, to taste

- Sour cream
- Shredded cheddar cheese
- Chopped cilantro
- Diced onions
- Avocado
- Crushed tortilla chips
Instructions
Stovetop Method
- In a large Dutch oven or soup pot, cook the ground beef and onion over medium-high heat until the beef is browned and the onion is softened.
- Add the garlic and cook for 1–2 minutes until fragrant.
- Stir in the broth, corn, black beans, chili beans, crushed tomatoes, green chiles, and seasonings.
- Bring to a gentle simmer.
- Cover and simmer for 15 minutes, stirring occasionally.
- Taste and adjust seasonings as needed.
- Serve hot with desired toppings.
Slow Cooker Method
- Add the ground beef to the slow cooker and break it into small pieces.
- Add all remaining ingredients and stir well.
- Cover and cook on High for 4–6 hours or Low for 8–10 hours.
- Stir before serving and add favorite toppings.
Notes
For a thicker soup, simmer uncovered for an additional 10–15 minutes.
A few tablespoons of cream cheese can create a creamier texture.
Rotel tomatoes can be substituted for extra flavor and heat.
Freeze cooled leftovers in airtight containers for up to 3 months.
