Hot Honey Tortellini Pasta Salad is a vibrant, flavor-packed dish combining tender cheese tortellini, juicy peaches, crispy prosciutto, and a sweet-spicy honey dressing—perfect for summer meals, potlucks, or easy weeknight dinners.

For the Salad:

  • 32 oz tortellini, cooked
  • 4 oz prosciutto
  • 8 oz pearl mozzarella balls
  • 15 oz can corn kernels, drained
  • 3 small peaches, diced
  • 2 cups cherry tomatoes, sliced
  • 1/2 cup fresh basil, chopped

For the Dressing:

  • 1/2 cup extra virgin olive oil
  • 1/3 cup hot honey
  • 1 tbsp Dijon mustard
  • 3 tbsp red wine vinegar
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Arrange prosciutto in a single layer and bake for 10–15 minutes until crispy. Set aside.
  2. Cook tortellini according to package instructions. Drain and allow to cool slightly.
  3. In a large bowl, combine tortellini, mozzarella balls, corn, peaches, cherry tomatoes, and basil.
  4. Chop crispy prosciutto into small pieces and add to the bowl.
  5. In a separate bowl or measuring cup, whisk together olive oil, hot honey, Dijon mustard, red wine vinegar, garlic, salt, and pepper.
  6. Pour dressing over the salad and toss gently until evenly coated.
  7. Serve immediately at room temperature or chill before serving.

  • Use ripe but firm peaches for best texture.
