For the Salad:
- 32 oz tortellini, cooked
- 4 oz prosciutto
- 8 oz pearl mozzarella balls
- 15 oz can corn kernels, drained
- 3 small peaches, diced
- 2 cups cherry tomatoes, sliced
- 1/2 cup fresh basil, chopped
For the Dressing:
- 1/2 cup extra virgin olive oil
- 1/3 cup hot honey
- 1 tbsp Dijon mustard
- 3 tbsp red wine vinegar
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper. Arrange prosciutto in a single layer and bake for 10–15 minutes until crispy. Set aside.
- Cook tortellini according to package instructions. Drain and allow to cool slightly.
- In a large bowl, combine tortellini, mozzarella balls, corn, peaches, cherry tomatoes, and basil.
- Chop crispy prosciutto into small pieces and add to the bowl.
- In a separate bowl or measuring cup, whisk together olive oil, hot honey, Dijon mustard, red wine vinegar, garlic, salt, and pepper.
- Pour dressing over the salad and toss gently until evenly coated.
- Serve immediately at room temperature or chill before serving.
Notes
- Use ripe but firm peaches for best texture.
- This salad tastes even better after chilling for 1–2 hours.
- Substitute bacon for prosciutto if preferred.
